Cooking Dinner With Fresh City Farms

Sent every Tuesday, Fresh City Farms deliver the pre-measured ingredients right to your home for you to make the dish with ease. Last week, I tried out my own culinary skills by making their Baked Cod With Tomato and Feta for dinner.

Wash & dry all fresh produce & have a quick read of the recipe:
Pre-heat oven to 400 F
Pat your fish dry with a paper towel, salt & pepper
Peel and mince garlic
Peel and medium chop red onion (save a bit for your salad if you wish)
Clean, remove seeds & medium chop 1/2 a green pepper
Slice green onion on the diagonal
Remove pits from olives (optional – with the flat side of a large knife gently tap the olive to remove the pit)
Open tin of tomatoes and place in a med bowl. Use your hands to gently crush the tomatoes
Place salad greens in bowl
Bring a pot of salted water to boil for the orzo. Keep in mind that orzo is a pasta however it takes much less time to cook than regular pasta (5-6 minutes)

Heat 2 tsp veg oil in a fry pan on med-high heat until shimmering. Sear fish on each side (1 1/2- 2 minutes). Remove the fish from the pan & place in an oven proof pan large enough to hold fish, onions green pepper & tomatoes
Crumble the feta cheese over fish & add olives
Fresh CanteenPrepare vegetables:
Add 1 tsp of oil to the same pan that you seared the fish in. Add the green pepper, onion (approx. 1/4 c) & garlic, saute for 3-4 minutes until vegetables start to soften
Add 1 1/4 c crushed tomatoes (10 ounces), oregano & chili flakes to your taste, simmer for 6 minutes or until the sauce becomes a little thicker. After it has reduced, have a quick taste & only season with salt & pepper if needed. Pour tomato sauce over fish & cheese, sprinkle top with green onions & bake for 10-12 minutes or until bubbly

Prepare the orzo:
Put orzo on to cook (5-6) minutes
Check after 5 minutes as orzo can easily over cook & turn to mush
Drain when al dente, place in a bowl and drizzle with a bit of olive oil (1 tsp)

Season salad and plate your dish:
Season salad with salt & pepper, dress with juice from approx. 1/2 lemon (or to your taste) & 2-3 Tbsp olive oil
Plate fish with orzo, some delicious sauce and serve with a slice of lemon
